Healthy Holiday Fudge
Comes from the book, Loving Yourself to Great Health.There is good news for all of you chocolate lovers. Chocolate is actually good for you. It’s the milk and sugar in chocolate that’s bad for you. If you eat raw, organic cacao beans (which is where all chocolate comes from), it’s a very healthy food.
Raw, organic cacao beans are rich in magnesium. Magnesium balances brain chemistry and builds strong bones. Our standard American diet contains almost no magnesium. Almost 80 percent of Americans are chronically deficient in this vital mineral. You can eat cacao beans raw. They taste like dark chocolate. You can also add them to smoothies and other beverages, make healthy desserts, and enjoy this chocolate without guilt
Preparation time 15-20 minutes
This is an easy raw-food recipe-just mix the ingredients and chill in the refrigerator to firm up.
- 1 jar of Almond butter (16 oz.)
- 4 Tbsp. raw cacao
- 3 Tbsp. coconut butter
- 3 Tbsp. coconut oil
- 5 Tbsp raw honey – sweeten to taste
- 2 Tbsp. vanilla extract
- 2 Tbsp. cinnamon powder
- 1 tsp. sea salt
- 1 tsp. cardamom powder
And lots of love!
Mix all ingredients over low heat if necessary. Taste to perfection – add more salt or honey or other ingredients as desired.
Press into rectangular dish or roll into balls. You can sprinkle with unsweetened shredded coconut too.
Chill in the refrigerator for 2 hours.
